Soft eggplant with nutty chickpeas and veggies like sweet potato, pumpkin, cauliflower, onion and sugarloaf cabbage in a fragrant tomato based sauce with some cheeky sultanas for a bit of sweetness.

Veggies are from Sophie & Daniel @ Gathered Organics and the Home Farm.
